Tapioca Pudding Recipe with Miracle Rice

I am going to share with you all today my tapioca pudding recipe that I made with miracle rice. If you are not yet familiar with the miracle rice then let me share a secret with you all it is a way to indulge in dessert in a guilt free way. That is right there are no calories in the food item no net carbohydrates, there is never any soy or gluten added into the package. I am no different than all of you I am always on the hunt for more shirataki noodles recipes and I am a huge lover for my favorite desserts too. You generally are not going to find tapioca on your dessert list if you are following a low carb diet but guess what today may just be your lucky day. The Recipe:(Tapioca Rice Pudding)

2) Bags of miracle rice – This will make 4 to 6 servings, so adjust the recipe to meet your needs.
1 to 2 Tablespoons of flour or cornstarch for thickening
3 Cups of Fat Free Milk or an alternative milk selection like flax, coconut or almond milk. If you really want to conserve on the calories then make sure that you get the unsweetened version.
2 eggs
12 packets of stevia or if you are using the liquid version you will need two Tablespoons. This can be adjusted to according to your individual taste buds. Some of us like things a little sweeter than others.
1) Tablespoon of Pure Vanilla Extract

That is it! Now let us put it all together so that it is ready to eat tonight. First we need to grab a descent size pot to mix all of the above ingredients in. We need the burner to be on medium to low heat we certainly to not want to take a chance of burning this low carb tapioca pudding dessert. So dump the milk in first and then begin whisking in the cornstarch or flour. You will want to keep stirring it until you feel it begin to get a little thicker. This should usually take about five minutes or so. If it does not get to the consistency that you desire then add in an additional tablespoon until you have the perfect match. A tip here is do not let it get too thick because as it cools it will thicken up even a little more. Now it is time to whisk in the eggs, the vanilla and the stevia. Last you want to add in the miracle rice. Once it is all blended together very well it is time to place it in serving dishes.
Next it is time to put them in the refrigerator so that they can finish setting up. I cover mine with saran wrap after they have set up. If you do it while it is still warm it will create a lot of moisture which I do not like.

This is a dessert that is really easy, delicious and the best part it is low in calories and low in carbs so we can have it whenever our hearts desire it! This is dessert at it’s finest!
